What's a realistic paneer yield from milk?

10-14% by weight from cow milk (depending on milk-fat %), 14-18% from buffalo milk. Below 10% means low-fat milk OR temperature / acidity control problems.

Ghee yield from cream / butter?

Roughly 6-7 kg of ghee per 200 kg whole milk via cream-route, or 5-6 kg via direct-cream method. Ghee commands 4–6× milk price by weight, so it's the highest-margin product.

Can I run this without a milk-belt location?

You can, but milk-procurement cost will be 15-25% higher (transportation from a milk-belt). Plant should be within 30 km of dairy farms to keep raw-milk cost under ₹45/kg.
