⚠️Risks & mitigation
- Milk-procurement competition (Amul, Mother Dairy, Hatsun): Tie 25–40 small farmers via daily-collection contract @ 2-3% premium over cooperative rate; locks supply, builds loyalty.
- Pasteurisation lapse / quality recall: Daily HTST temperature log + CIP (clean-in-place) protocol. One Salmonella batch ends the business — insurance + traceability is essential.
- FSSAI / BIS audit failure: Monthly third-party NABL milk-product testing; maintain 18-month archive of test reports.
- Cold-chain power-cut spoilage: 10 kVA inverter + DG backup non-negotiable. A 4-hour blackout can spoil ₹40–60k of paneer stock.
💰Funding & support programs

- PMFME: 35% credit-linked subsidy up to ₹10L for dairy-products micro-units.
- NABARD DEDS: 25-33% back-end subsidy for dairy-processing units.
- MoFPI PMKSY / SAMPADA: grants for cold-chain & food-processing infra.
- AHIDF (Animal Husbandry Infrastructure Development Fund): 6% interest subvention on dairy-processing term loans.
🇺🇸USA
- USDA Dairy Value-Added Producer Grant + FSA Direct Operating Loan + SBA 7(a).
🇬🇧UK
- DEFRA Farming Investment Fund + Innovate UK Food Manufacturing for dairy SMEs.
🇪🇺EU
- CAP Pillar I + Pillar II dairy-processing grants; LEADER rural-dairy SME programmes.

❓FAQ
What's a realistic paneer yield from milk?
10-14% by weight from cow milk (depending on milk-fat %), 14-18% from buffalo milk. Below 10% means low-fat milk OR temperature / acidity control problems.
Ghee yield from cream / butter?
Roughly 6-7 kg of ghee per 200 kg whole milk via cream-route, or 5-6 kg via direct-cream method. Ghee commands 4–6× milk price by weight, so it's the highest-margin product.
Can I run this without a milk-belt location?
You can, but milk-procurement cost will be 15-25% higher (transportation from a milk-belt). Plant should be within 30 km of dairy farms to keep raw-milk cost under ₹45/kg.
Should I sell branded retail or B2B to mithai shops?
B2B (mithai shops, hotels, caterers) is faster revenue + 25-30% margin. Branded retail (D2C through local stores) takes 6-12 months to build but commands 40-50% margin. Most plants do 70/30 B2B/D2C in year 1.
How critical is the cold-chain?
Paneer at > 6°C develops bacterial spoilage within 24 hours; ghee tolerates room temperature better. A cold-room is non-negotiable; cold-chain transport is the more expensive and easier-to-shortcut weak link.
