Tips for scaling

  • Baking: works well up to 2× — beyond that, watch baking time and pan size.
  • Salt & spice: scale slightly less aggressively (multiply by ~0.85× the target factor) to avoid over-seasoning when doubling or tripling.
  • Eggs: round to whole numbers, or use a half-egg by whisking and weighing.
  • Yeast / leavening: doesn’t scale linearly beyond 3× — use slightly less.
